Epic Valet Welcomes Roman & Fogo de Chão Gilbert to the Family

A big week for Epic Valet in the East Valley

This week, Epic Valet is proud to begin service at two of the most anticipated restaurant openings in the Valley: Roman in Tempe and Fogo de Chão in Gilbert. Both are running friends & family preview nights this week ahead of their official grand openings, and Epic Valet is on-site for all of it. Two very different concepts, one shared standard — guests should feel taken care of from the moment they pull up.

Roman brings wood-fired Italian to Tempe

Roman kicked off with a friends & family preview night and is running another this week, ahead of its official grand opening on August 7 at the corner of Mill Avenue and Rio Salado Parkway. Co-owner Teddy Myers spent three years developing the concept, and the kitchen is led by award-winning chef Scott Conant, who brings more than 40 years of Italian cooking experience and a philosophy built on restraint — letting quality ingredients speak for themselves. Expect wood-fired dishes like rigatoni carbonara with pecorino romano and guanciale, grilled head-on shrimp, and a Roman-inspired pasta all’amatriciana, served in a dining room styled after Roman art and architecture, sculptures included.

Epic Valet is handling valet for Roman’s preview nights and grand opening alike, right at one of Tempe’s busiest intersections — exactly the kind of high-traffic location where professional valet makes the biggest difference for guests and staff. AZFamily got a sneak peek inside ahead of opening night.

Fogo de Chão comes to Gilbert

Just up the road, Fogo de Chão is holding friends & family preview nights this week, with its official grand opening following on August 3 at Signature at SanTan Village, near Williams Field Road and SanTan Village Parkway. The Brazilian steakhouse is known for its Full Churrasco Experience, with gaucho chefs carving fire-roasted meats — picanha, filet mignon, ribeye, lamb, and chicken — tableside, alongside an expansive Market Table of salads, vegetables, and traditional Brazilian dishes. The Gilbert location will also offer weekday lunch, weekend brunch, seafood, catering, and Bar Fogo, its dedicated bar and lounge.

Epic Valet is on-site handling arrivals for the new location, giving guests a smooth, professional start to the experience before they even reach the door — preview nights included. East Valley Now has more on the opening, including hiring details for the new location.

We specialize in restaurant & hotel launches

Opening week is exactly when valet matters most — no established routine yet, unpredictable crowds, and a first impression that only happens once. It’s a specialty of ours. We’ve launched countless establishments and genuinely enjoy the planning, consulting, flexibility, and creativity that come with a brand-new location — every launch has its own layout, its own traffic patterns, its own quirks to solve for, and figuring that out is part of the fun. Beyond Roman and Fogo de Chão Gilbert, Epic Valet has recently launched valet programs for the Senna House hotel and The Remi in Scottsdale, in addition to our ongoing restaurant and hospitality accounts across the Valley. We have the experience, and when it comes to opening-week valet, we’re the best choice.

Growing alongside the Valley’s best openings

Being trusted with the arrival experience at two of the Valley’s most talked-about new restaurants in the same week is a good reminder of why Epic Valet does this work — it’s not just parking cars, it’s setting the tone for a guest’s entire night out. If you’re opening a restaurant or hotel and want valet done right from day one, we’d love to talk.
